Boil the potatoes until tender but firm. Once cooled, peel them and cut into 1-inch cubes.
Heat oil in a large non-stick pan or kadai over medium heat. Add ginger-garlic paste and finely chopped green chilies, then sauté for 30 seconds until fragrant.
