Place beef, salt and pepper in a bowl. Use your hands to gently mix it together. Do not over mix, otherwise the burgers will be tough.
Divide into 4 equal portions. Form into patties about 1.5cm / 0.6" thick. Make a shallow indent in the middle of each patty (this stops them from bulging).
Heat oil in a large skillet over high heat. Add patties and cook for 3 minutes on one side until a deep golden crust forms.
Flip and cook for 2 minutes on the other side for medium rare, or 3 minutes for medium.
Remove from skillet and rest for 5 minutes.
Serve immediately on buns with desired toppings.
