Add hot water and sugar to a mixing bowl. Melt sugar and bring water to warm.
Add yeast and mix. Let it rest for 10-15 minutes then yeast activates.
Add salt and maida. Knead into sough dough and add oil while kneading.
Add more warm water if required to knead dough. Knead the dough until it gets smooth texture.
Cover and rest for proofing for 1-2 hours.
Make cuts on tomatoes and boil for 2 minutes.
Take them out and cool down. Remove the skin and add to a blender and blend smooth.
Heat oil in a pan and add garlic. Once the garlic is fried add tomato puree and all the herbs.
Add salt and sugar as well. Mix well and cook until it thickens.
Finally add chilli powder and mix well. Cook until it gets desired consistency and cool down.
After proofing, punch the dough.
Spread the dough into a greased pizza tray and create a dent at the edges.
Prick with fork, spread pizza sauce, mozzarella cheese and toppings of choice. I have added onion, tomato, corn, capsicum and olives. Add more cheese and chilli flakes and oregano (optional).
Bake at 200°c for 25-30 minutes in preheated oven.
Baking time varies from oven to oven so check in between while baking. Once the cheese is changing in colour then its time to take out.
Take out after baking and slice it.
