Ingredients

  • 400 g Boneless fish, cubed
  • 1 whole egg
  • 2 tsp cornflour
  • 1 tbsp ginger garlic paste
  • 1 tsp soy sauce
  • 1 tsp red chilli powder
  • pinch turmeric powder
  • 0.5 tsp pepper powder
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 2 sprays oil sprays, for air frying
  • 1 sprays oil sprays
  • 1 sprig curry leaves
  • 4 clove garlic cloves, chopped
  • 1 whole green chillies, chopped
  • 2 tsp soy sauce
  • 1 tsp red chilli powder
  • pinch turmeric powder
  • 0.5 tsp pepper powder
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 1 tsp soy sauce
  • 1 tsp chilli sauce
  • 2 tbsp tomato puree
  • 1 tsp honey or sugar
  • 2 tbsp water
  • 1 tbsp coriander leaves, to finish
  • liberal squeeze lemon juice
  • 1 whole onion, chopped (small)
  • to taste salt

Instructions

    Mix the egg, cornflour, ginger garlic paste, soy sauce, chilli powder, turmeric, pepper, coriander powder, garam masala, salt & a liberal squeeze of lemon into a marinade. Coat the fish & rest for 10 minutes.

    Air fry with a few sprays of oil at 200°C for 8 minutes, then bump to 220°C for another 3–4 minutes, until golden & crisp.

    Heat a few sprays of oil in a pan. Add curry leaves, garlic, onion & green chilli, and cook until golden.

    Add the spices, soy sauce, red chilli sauce, tomato puree, honey, salt & water. Simmer & let it reduce into a glossy sauce.

    Tip in the fried fish, toss well to coat, switch off the flame & finish with chopped coriander. Serve hot!
