What Is Umami, and Which Ingredients Have It?

For a long time, taste was taught as four basic categories: sweet, salty, sour, bitter. Umami is the fifth — a savory, deep, mouth-filling taste that's genuinely distinct from the other four, not just a mix of them. It was identified by Japanese chemist Kikunae Ikeda in 1908, and dedicated taste receptors for it have since been confirmed on the tongue.

What it actually tastes like

Umami is often described as "savory" or "meaty," but that undersells it slightly — it's more accurately the taste that makes a dish feel rich, full, and satisfying rather than flat, even before you factor in saltiness or spice. A well-made broth, a properly aged cheese, or a slow-cooked tomato sauce all have real umami depth that's noticeably different from just being salty.

The chemistry behind it

Umami taste receptors respond primarily to glutamate (an amino acid) and, to a lesser degree, certain nucleotides like inosinate and guanylate. This is also the same compound in MSG (monosodium glutamate) — which has the same naturally occurring taste effect as the glutamate found in aged cheese or slow-simmered broth, despite MSG's reputation being far more controversial than those naturally umami-rich foods.

Ingredients that bring real umami

  • Soy sauce — fermentation produces a significant amount of free glutamate.
  • Parmesan and other aged cheeses — aging breaks down proteins into free glutamate over time.
  • Mushrooms, especially dried ones — drying concentrates their natural glutamate content.
  • Tomatoes, particularly cooked down or in paste form — glutamate content increases as tomatoes ripen and concentrate.
  • Slow-simmered meat or bone broths — long cooking breaks down proteins and releases both glutamate and umami-boosting nucleotides.
  • Fish sauce and miso — both fermented, both glutamate-rich for the same reason as soy sauce.

Why combining umami ingredients works so well

Glutamate and certain nucleotides (like the ones in dried mushrooms or cured meats) have a synergistic effect — combined, they can produce a stronger umami sensation than either would alone at the same concentration. This is part of the real reason why combinations like tomato and parmesan, or a broth built from both meat and dried mushrooms, taste more savory together than either ingredient does on its own.
