Heat a pan and dry roast all the khada masala—coriander seeds, cumin seeds, black pepper, cashews, green cardamom, cloves, cinnamon, fennel seeds and whole Kashmiri red chillies—until fragrant and nicely roasted.
Let the masala cool, then transfer it to a mixer jar and grind into a fine powder. Keep aside.
Heat oil in a kadhai. Add cumin seeds, cinnamon and bay leaf.
Add chopped onions and sauté until golden brown.
Add crushed ginger-garlic (not paste) along with fresh curry leaves. Sauté well.
Add the washed and drained chicken and salt. Roast on high flame for 5-6 minutes.
Add half of the prepared roasted masala, turmeric, garam masala and optional chaat masala. Mix everything well.
Continue cooking on medium to high flame, stirring and roasting the chicken nicely.
Lower the flame, cover and cook for 4-5 minutes.
Remove the lid, garnish with fresh coriander and serve hot with rice, roti or paratha.
